Spirulina veg out stuffed peppers

These peppers are a great side or main course.


Make two services


Mixed ingredients:
- 2 fresh green peppers, any color (sliced at bottom and top)
- 1 cup of cooked quinoa
- 2 teaspoons extra virgin olive oil
- 1 onion, chopped
- 6 ounces of mushrooms, chopped small
- Chili peppers cut into cubes
- Cup diced cherry tomatoes
- Fresh black pepper
- 1 cup grated goat cheese
- 1 teaspoon Hawaiian Spirulina powder


Route:
Preheat oven to 375. Stir-fry onions, mushrooms and chili until softened. Sprinkle with black pepper. Add the mixture to quinoa and mix the tomatoes and Spirulina Hawaii into small pieces. Place the pepper "shell" in a small baking pan and add the quinoa and vegetable mixture. Cover with aluminum foil and bake for 30 minutes. 30 minutes later, remove from the oven and sprinkle goat cheese. Bake for another 15 to 20 minutes until goat cheese begins to melt and turn brown.


Note: Like many vegetables, the nutrients in Spirulina may decompose when heated, so we recommend minimizing calories.
